I have Crown K-2 driving two Electro-Voice Sx500+ speakers. I want to use the amp in a small setting, so I only want to hook up one speaker. Do I need to do anything to the amp other than disconnect one of the speakers from its cable?

You will not need to do anything special. However, if you plan to leave the input plugged in, on the unused channel than I would turn down it's input level control. No particular reason except it is good practice.
